Sour cherries cake - easy and effective recipe

Discouraged as I was after my last fail in doing a cake, I took a chance and tried and tried this easy recipe. Sour cherries are available in this period of the year and my tree provided a nice load of them. The recipe was taken from Jamila's blog, because I heard from a friend that they were fine to try.

The ingredients are:
  • 100 ml oil
  • 300 gr flour
  • 300 gr sour cherries
  • 200 gr yogurt
  • 200 gr sugar
  • 10 gr baking powder
  • 1 tb vanilla extract
  • 4 eggs
  • lemon zest
  • salt
Firstly, begin with mixing the dry ingredients, the flour, sugar, baking powder and salt. After that, add the eggs, oil, yogurt, vanilla extract and lemon zest. Mix it all together; I used a spoon, it was easier for me as I didn't want any machine to get dirty.

Before putting the composition in the tray, I put a few drops of oil and baking paper so it sticks. A tip I've heard about when you put the sour cherries on top of the cake is to mix them with flour just before adding them. This prevents them to sink on the bottom of the tray.

When the composition is done, put the cake in the pre-heated oven, at approximately 175° for 50 minutes. While the 50 minutes were passing, I never opened the oven, to make sure the heat was even. After that time, I put a toothpick to verify if it's done. If there are traces of composition on the toothpick, leave it in the oven more.

It is an easy recipe and if you follow it, you'll definitely have good results.

Bon apetit!
